The smell of warming spices leaping from the oven with wide open arms, bringing a brightness to the quickly darkening afternoon, proves that winter, more than any other time of the year, is made for home baking.
These cookies, whether the nutmeg or the ginger, do just that. Their flavours are comforting winter flavours and their aroma is divine. Perhaps most importantly though, they are healthy, accessible and so simple to make.

- 250g spelt flour
- 50g ground almonds
- 75g agave syrup
- 1/2 tsp baking powder
- 4tsp coconut oil
- 3tsp honey
- ground nutmeg
- ground ginger
What to do…
In a bowl, mix together the spelt flour, ground almonds, baking powder and agave syrup. If you do not have any ground almonds in your cupboard but have flaked almonds then you can use these by giving them a whisk in a food processor beforehand to grind them down.
As we are making two different flavoured biscuits, divide the ingredients so half is in a separate bowl. Then, in one, add some nutmeg and, in the other, add some ginger.
Melt the coconut oil and honey in a pan and then pour equally into the two bowls, stirring so it all sticks together.
Using your hands, roll and squish the dough into cookie shapes and place on a lined baking tray. Bake in the oven at 180 degrees for fifteen minutes.
Take out, leave to cool and then enjoy with a cup of tea or a mug of hot chocolate.
