Short and Sweet

Treat yourself this month-ending with two lightning-quick, magic-trick desserts where minimum fuss meets maximum taste.
The mousse is a light lunch go-to, a satisfying snack, and cracks that all-too-familiar chocolate craving, whilst the second is gorgeously rich and evokes a certain nostalgia with it`s childhood connotations.

Raw Cacao Mousse

This guilt-free cacao mousse uses avocados and dates, is gluten, dairy and refined sugar free and is rich in antioxidants- basically a chocolate healthfood. What’s not to love?
Time: 5 minutes
Serves: 4

Ingredients:
4 small ripe avocados
4 pitted medjool dates
55g (1/2 cup) raw cacao powder
120ml (1/2 cup) coconut milk
80ml (1/3 cup) rice malt syrup
2 tbsp coconut oil
1 tsp vanilla essence or vanilla powder
1 tbsp mesquite powder

Steps:

  1. Put all the ingredients in the food processor and process until smooth.
Toblerone Crepes

On the opposite end of the health scale- unapologetically indulgent crepes.
Simple, speedy and sensational, these are the ultimate treat.
For special occasions only!
Time: 8 minutes
Serves: 4

Ingredients:
4 ready-made crepes
16 squares of Toblerone
Icing sugar for dusting
Strawberries and ice cream to serve

Steps:

  1. Fold each crepe in half and place four squares of Toblerone inside each.
  2. Microwave each crepe for a minute and a half on high or until the Toblerone triangles have melted slightly.
  3. Sprinkle each with icing sugar and serve with chopped strawberries and a scoop of ice cream.
